Since ancient times, cultures around the world have crafted fermented fish sauce as a cornerstone of their cuisine. Yet true, authentic fish sauce has become nearly impossible to find. Fish is a precious and vulnerable resource, and today most commercial fish sauces are produced industrially with artificial ingredients and shortcuts. Many consumers remain unaware of this shift—or simply accept it. This is where the story of Noumami begins.

New Horizons
No one had ever attempted to make traditional fermented fish sauce from salmon or other premium Norwegian fish. After five years of dedicated research and development, the vision became reality. In 2018, under Norway’s strictest standards for food safety and quality, Noumami established its production facility in Sandnes. There, we created the world’s first fish sauce made from Norwegian salmon.
